Cracker Barrel Meatloaf

Ingredients

– 2 eggs
– 2/3 cup milk
– 32 Ritz crackers, crushed
– 1/2 cup chopped onion
– 4 oz shredded sharp cheddar cheese
– 1 tsp salt
– 1/4 tsp pepper
– 1 1/2 lbs ground beef
– 1/2 cup ketchup
– 1/2 cup brown sugar
– 1 tsp mustard

Instructions

1. Preheat the oven to 350°F.
2. Beat the eggs, then add the milk and crushed crackers. Stir in the onion and cheese.
3. Mix in the ground beef until well combined, then shape the mixture into a loaf.
4. Bake for 45 minutes.
5. For the topping, mix the ketchup, brown sugar, and mustard.
6. After 30 minutes of baking, spoon half the topping over the meatloaf. Bake for another 10 minutes.
7. Add the rest of the topping and bake for an additional 5-10 minutes.
